Cheesy Chicken with Tomatoes and Sunflower Seeds

1 Tbsp raw sunflower seeds
4 boneless, skinless chicken breast halves
1 Tbsp fresh lemon juice
1/2 tsp freshly ground black pepper
1/4 tsp salt
1 (14.5oz) can ready cut tomatoes, drained
4oz reduced fat monterey jack cheese, shredded

Preheat oven to 350. Put sunflower seeds in pan and bake for 10 minutes, or until golden brown; watch carefully so they don't burn. Place chicken in baking dish and sprinkle with lemon juice, pepper and salt. Cover. Bake for 20-30 minutes. Remove from oven and pour off any excess liquid. Spoon tomatoes evenly over chicken. Sprinkle with sunflower seeds and monterey jack cheese. Place dish under broiler for about 1 minute, until cheese is melted. Do not brown.
