Mel's Diner Chicken Cilantro Soup

4 cooked chicken breast halves
2 cans chicken broth
2 cans chopped tomatoes
4 Tbsp chopped fresh cilantro
1 medium onion, sliced in rings and sauteed in butter
1/2 tsp black pepper
garnish: crushed taco chips, monterey jack cheese

Bring all ingredients except garnish to a boil. Simmer 45-60 minutes. Serve soup over a thin layer of crushed taco chips with monterey jack cheese on top.
