Pan-Seared Steak with Farmhouse Cheddar

4 (4oz) beef tenderloin fillets (1" thick)
1/2 tsp salt
1/2 tsp freshly ground pepper
2 Tbsp butter
2 Tbsp green peppercorns, rinsed
1oz white farmhouse cheddar, shaved

Sprinkle beef with salt and pepper. Melt butter in large skillet over medium-high heat. Add beef; cook 8-11 minutes for medium rare or until desired doneness, turning once. Place beef on serving platter; top with cheese. Stir peppercorns into pan drippings; cook briefly. Pour over beef.
