Sausage Breakfast Pitas

1 (12oz) pkg sausage links
1 Tbsp butter or margarine
1 C sliced mushrooms
3 eggs
1/4 C milk
salt and pepper to taste
3 pita breads, halved
6 slices Colby or cheddar cheese

Cook sausage according to package directions; drain and set aside. Preheat oven to 325. Melt butter in skillet over medium heat. Add mushrooms and cook, stirring frequently, 3-4 minutes. Stir in eggs, milk and seasonings; pour over mushrooms and cook, stirring frequently, until eggs are set. Fill each pita with 1 slice cheese and 2 sausage links. Divide scrambled eggs between pitas. Wrap pitas tightly in aluminum foil. Bake 15 minutes. Serve immediately or reduce oven to 250 and keep warm up to 30 minutes.
