Vanilla-Maple Syrup

From Cooking Light Magazine March 2000
Serve with Sweet Potato-Pecan Pancakes

1 1/2 C maple syrup
1 (3") piece vanilla bean, split lengthwise or 1/4 tsp vanilla extract

Pour maple syrup into a medium saucepan. Scrape seeds from vanilla bean; add seeds and bean to syrup. Bring to a simmer over medium heat, and cook 5 minutes. Remove from heat; discard bean.
