Cheesy Potatoes with Sausage

Dave came up with this "recipe". Such a comfort food!

Olive oil
1 roll summer sausage, diced
2 potatoes, diced
1/4 C onion, diced
garlic powder, black pepper and red pepper flakes to taste
1 C shredded cheddar

Heat oil in pan. Add sausage and cook over medium-high heat until browned, about 10 minutes. Remove from pan; set aside. Place potatoes, onions and spices in pan. Cook on medium high heat until fork-tender and browned, about 20 minutes. Return sausage to pan. Add cheddar cheese; cover. Cook over low heat until cheese is melted, about 5 minutes. Enjoy!

subsituted italian sausage for the summer sausage and used more taters but was still good
