*To make the best scrambled eggs, heat the eggs with some of the butter over low heat. When the eggs start to thicken, beat in more cold butter. Scrambled eggs should be soft but firm-not runny, but certainly not dry.

*Fried eggs should be cooked gently. Use medium heat rather than high to keep them from forming that tough, brown, frizzled bottom.
