Avocado Chicken Salad

From "The Lady & Sons Savannah Country Cookbook"

3 C cooked, diced chicken
3 C cooked white rice
2 avocados, peeled, diced, and tossed with 1 tablespoon lemon juice (to prevent browning)
3/4 C chopped onion
1 C mayonnaise
1-2 tsp pepper
1 tsp salt
1/4 C chopped fresh parsley

Mix all ingredients and chill. Pass with avocado dressing.

Avocado Dressing
1 large avocado, peeled and mashed with 2 tablespoons lemon juice
1 C mayonnaise
1/2 C sour cream
1/2 tsp Worcestershire sauce
1/3 C chopped onion
2 cloves garlic, minced
1 tsp salt
Dash of cayenne pepper

Place all ingredients in a food processor and blend until smooth. Chill and serve alongside Avocado Chicken Salad
