Watermelon Gazpacho with Chile and Feta Cheese

From Tyler's Ultimate

3 C coarsely chopped fresh tomatoes (about 6 large)
3 C cubed and seeded fresh watermelon (about 8 ounces)
1 serrano chile
2 Tbsp red wine vinegar
1/4 C EVOO
2 Tbsp minced red onion
1 cucumber, peeled, seeded and minced
2 Tbsp minced fresh dill, plus more sprigs for garnish
Kosher salt and freshly ground black pepper
1/4 CC cumbled feta cheese

In a blender, puree the tomatoes with the watermelon and chile. Pour in the red wine vinegar and olive oil and pulse to blend. Fold in the onion, cucumber, and minced dill and season with salt and pepper. Pour into shot glasses and sprinkle with feta and sprigs of dill. Serve at room temperature.
