From Every Day with Rachael Ray May 2008
2 canned anchovy fillets
1 clove garlic
2 Tbsp lemon juice
2 Tbsp chicken broth or water
1 Tbsp Dijon mustard
1/2 C mayonnaise
1/4 C grated parmesan cheese
1/2 C EVOO
Salt and pepper
Using a food processor, mix the anchovies, garlic, lemon juice, chicken broth and mustard into a paste. Add the mayonnaise and parmesan. With the machine on, slowly pour in the olive oil. Season with salt and pepper.
