South of the Border Wraps

From Terry & Anji

4 Tbsp lime juice
1 Tbsp oil
chili powder to taste
8oz firm tofu-crumbled
1/2 C red onion-chopped
dash of cilantro
1 clove garlic crushed or garlic powder to taste
4 tortillas
1 diced avocado
1 C salsa
Bag of iceberg lettuce salad
salt and pepper to taste

Whisk 3 tablespoons lime juice, chili powder, oil. Add tofu, onion, cilantro, garlic and salsa. Toss. Season with salt and pepper. Marinate 20 minutes. Preheat oven to 350. Heat tortillas 10 minutes. Add lettuce, avocado, and remaining lime juice into tofu mixture. Spoon onto tortillas.
