Morning Glory Muffins

2 C all-purpose flour
1 1/4 C sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
2 C grated carrots
1/2 C raisins
1/2 C shredded coconut
1/2 C chopped pecans
3 eggs
1 C vegetable oil
1 apple, shredded
2 tsp vanilla extract

Preheat oven to 350. Grease 24 large muffin cups. Mix flour, sugar, baking soda, cinnamon and salt in large bowl. Stir in carrots, raisins, coconut and pecans. Combine eggs, oil, apple and vanilla in a medium bowl; stir well. Add egg mixture to flour mixture; stir just until combined. Spoon batter into prepared muffin cups. Bake until toothpick inserted in center of muffin comes out clean, about 15 minutes.
