2 Tbsp olive oil
1 ham shank, cut in 1" pieces
black pepper
2 C thinly sliced yellow onions
salt
3 lb fresh green beans, trimmed
water
Add oil to large saucepan. Season ham with pepper. Add ham, cook 2 minutes on each side. Remove and set aside. Add onions. Season with salt & pepper. Saute 2 minutes. Add ham and beans. Cover with water. Bring to boil. Reduce heat; partially cover, cook 2 hours.
