Crispy Potato Chicken

1 Tbsp grated Parmesan
1 tsp paprika
1 tsp garlic salt
1 tsp salt
1 tsp pepper
3 1/2-4 lb chicken pieces, skin removed
2 eggs
2 Tbsp water
1 1/2 C mashed potato flakes
1/2 C butter or margarine, melted

In large plastic bag, combine first 5 ingredients. Add chicken in batches; toss to coat. Beat eggs and water. Dip chicken in egg mixture, then coat with potato flakes. Pour butter into 9x13" baking dish. Add chicken. Bake, uncovered, at 375 for 30 minutes. Turn chicken. Bake 30 minutes longer, or until chicken is done.
